INTRODUCING OUR JUNE RELEASE, APRICOT BRANDY! We took local Verdelho wine grapes from Witches Falls Winery and gave them the good ol’ foot stomp! The grapes were pressed, fermented into wine, and distilled into, what we now called, Foot Stomp Brandy. Then, after two years ageing in a 20L American Oak barrel from our very first bourbon run, we soaked the brandy with dried apricots and blended it with our house-made apricot nectar. The result? A rich, juicy Apricot Brandy Liqueur with sweet dried fruit on the nose, soft oak through the palate, and a smooth, lingering finish. But what even is brandy? It’s wine’s stronger, sexier cousin, distilled from fermented fruit and aged to perfection. Think warm hugs, soft spice, and fruity richness in every sip. We just made it better (and hazier) with a hit of apricot liqueur magic. This one’s for sipping over ice, with lemonade or straight from the bottle (we don’t judge, that’s the way Nicky drinks it). At the time of writing, this is our oldest whiskey we’ve ever released, aged for four years and two months in a 100L Virgin American Oak Barrel. Over the years, this batch lost over 60% of its original volume to the angels, resulting in an whiskey that has concentrated into a dense, flavoursome caramel sip. A whiskey born of a promise, this is our first ever ex-wine barrel whiskey, aged for three years and seven months in a 100L Ex-South Australian Cab Sav French Oak barrel. This complex barrel profile matched with the tropical South East Queensland climate created a perfect marriage of barrel influence and base spirit perfection. At 45% ABV, this whiskey is ideal for a straight tipple, or over a large piece of ice. TASTING NOTES The Nose: This is perhaps the most important part of assessing a whiskey. Introducing Barrel B033, a 100L French Oak barrel that's delivered something truly special. With a medium char, and a long 3 year and 4 month rest by the coast, this whiskey developed into a bold and complex spirit, rich in character and flavour. At 46%ABV, and with only around 90 bottles expected, it's one of those rare releases that won't stick around for long. It's like biting into a 70% Dark Lindt Chocolate Bar, only it's whiskey and we're absolutely here for it.  TASTING NOTES The Nose: This is perhaps the most important part of assessing a whiskey. Aged for 2 years and 9 months in a 100L French Oak ex-red table wine barrel, losing over 82% of it’s original volume due to a large leak, and general evaporation and wood soak over the years. The intense flavour profile of the wine barrel—combined with the QLD tropical maturation climate—delivers a rich and characterful spirit, perfectly balanced between barrel influence and our bold base whiskey.  Nose: Sweet fruit cake, dried peaches, hints of oak. Palate: Cigar box, tobacco, dried fruit.

These whiskeys started out as the same liquid, brewed out of 100% heavily peated malt and distilled in the same batch on the same day. Their journey parted when the, then 65.88% ABV liquid was divided in half & sent to hibernate into two separate small 20L barrels. Each barrel with its own characteristics - as a result of the Cooper’s handcrafting. The barrels were both made of Virgin American Oak and both only lightly charred (one more tightly coopered than the other). The whiskeys spent 2yrs & 1mth sitting right beside each other in our barrel room, ageing away, slowly leaking, evaporating and soaking into the wood until finally being ready for bottling. This is when the differences emerged.  

In 1932 the Bailiff carried an old school bank note bag to collect the final payment for the farm from the young Granddad Jack. He proudly made payment in full, and the Bailiff stamped Granddad Jack's ledger 'paid'. As the next chapter of our Bailiff Whiskey begins, we were determined to create a timeless piece that represents Granddad Jack's values and brings another component to the story. So, this year, we embarked on an ambitious project to create another bespoke item to house our premium, small-batch whiskey releases. In the spirit of Granddad Jack, we've created something to be kept, cherished, and reused long after the bottle is empty.  The making of the Bailiff’s Bank Bag: The Bailiff's bank note bag was entirely constructed and finished by the skilled hands of Josef Selway, co-owner and talented craftsman behind the boutique workshop Blue & Grae, located in Albion, Brisbane. This piece was created to represent the old-school bank bag carried by the Bailiff as he approached to collect what was owed on the farm all those years ago. The bag's design and functionality, along with the traditional methods & tools used to craft it, are also a little nod to those from the same era of the story. Every element has been carefully thought about, from sourcing the finest Australian leather & assembling the components with tarnished hardware to represent the age. The dedication to true craftsmanship & meticulous attention to detail shown by Josef guarantees small-batch, quality pieces every time, each slightly different to the next. The story behind the ledger: When Granddad Jack made payment for the farm in full, he had never been prouder. So now, as you join the journey, we mark this moment as you, too, have made payment to the Bailiff. With every drink, we encourage you to celebrate. Hazy Coconut Gin is the result of our passion for creating unforgettable experiences and making all our customers especially our biggest supporters feel like they’re at home. This Limited release was created by macerating juniper, coconut oil, coconut flakes, and lime peel in the still for 24 hours, creating a smooth, zesty base with a vibrant citrus boost. During distillation, we supercharged the gin basket with toasted coconut, adding a sweet nose and light caramelisation. To finish, we incorporated a reduction of coconut water, amplifying the coconut flavour and creating its signature hazy appearance. The result? A velvety, extra-smooth gin with creamy coconut, a touch of lime zest, and a dry hint of juniper. This Granddad Jack’s staff release is for Kailani Hubbard, or best known by her GJ’s family as Kikki. One of the friendliest faces you’ll see around our Gold Coast tasting room, and Queen of creating some of our favourite weekly cocktails. To celebrate her one year, Kikki has created a release that’s as elegant and cheeky as her, combining her love for Umeshu, a Japanese Plum Wine and her passion and talent for ballet. Always smiling and cracking a joke, Kikki has been an incredibly valuable crew member here and we’re stoked to be able to showcase her release and share her story with you through this unique spirit. “From before I could walk, I was dancing, not well but I was. I love the artistry, the athleticism, the elegance, and the structure of ballet. I love how my studio’s wooden floors smelt after a long day of class, having fresh oranges during my concert intervals, and indulging in the dreamiest vanilla slice at the theatre before watching a show. These memories are carefully contained within the flavours of this release! One of the first-ever ballet shows I saw was The Nutcracker, an absolute cult favourite. I used to go during the holidays with my mum, Miss Caroline (my teacher) and Audrey (my dancing little sister). I always looked forward to watching the ‘Dance of the Sugar Plum Fairy’, because she always wore the most beautiful tutu and danced to the best song in the show. I truly would dream about dancing like this one day, and thanks to the beautiful people in my life, I got to dance all the time with motivation stemming from the Sugar Plum Fairy; she is a huge reason why I continued to dance for years. So, I really wanted to make a homage to the character through my release. Ironically one of my favourite drinks to have is Plum Wine, a beautiful Japanese liquor known as Umeshu. In an abstract way, I think ballet and Umeshu share similar characteristics such as elegance, balance, and sometimes a bit of tartness, which I wanted to emulate through my release. This doesn’t really mean cheers, but have it in good ballerina spirit, chookas! For this release we not only used lime in the traditional sense but crafted a sprit that included a native lemon myrtle and even some lemon pie which was distilled into the batch for a light pastry note. The Gold Coast Tasting Room limited-release Milo Spirit is the second limited release in the Granddad Jack’s Nostalgia Project. This release is our take on the well-known Aussie staple, Milo. Made with Milo Powder, Malt Extract, Manuka Honey, Milo Cereal and Vanilla Beans, this liquid is surprisingly clear but incredibly moreish and a straight drop of liquid nostalgia. This release is our very first Rum. Housed in our SE Qld barrel room in sub-tropical environments and aged for 2 years and 1 month in a 50L medium char American Oak barrel, this single barrel rum release was made from a pre-maturation blend of distilled molasses (74%) and unrefined cane sugar, known as distilled panela (26%). This blend created the perfect balance of light and grassy notes and bold and bitter notes from the molasses.  During the ageing process, 39% of the total starting volume was shared with the angels, resulting in a concentrated mixture of barrel spice and sweet rum. Reduced to 43% ABV, there are only 96 bottles available.   Nose: American Whiskey, Toffee Apple, Stewed Fruit, Nutmeg and Clove Palate: Smooth Vanilla, Cinnamon, Golden Crust of an Apple Pie Packaging: Hand packed by us, each bottle is individually wrapped and waxed with the pieces you need to find our hidden treasure. Then, your bottle is carefully packed into a handcrafted leather pouch that can be cherished for years to come and reused often.
