Mica and Vendela worked closely together to create the vodka. They macerate condensed milk, whey powder, meringue kisses, vanilla beans and saffron. Then cooked and vapour infused the spirit with extra vanilla beans and meringue to add sweetness. They added a house-made saffron syrup to finish the spirit, adding extra colour and a truly silky and creamy mouthfeel.

At Granddad Jack's, staff mark their first anniversary by being given the opportunity to work alongside the production team to think up and create their very own spirit. The release is entirely their own, from concept to choosing the botanicals, putting together the label, distilling the product and sharing their story.Our Warehouse Coordinator, Byron Hubbard, is a big part of the behind-the-scenes here at Granddad Jack's, looking after your online orders and keeping everything in the warehouse running smoothly. When he's not carefully curating a playlist to blast out the back, he's labelling and hand waxing bottles, packing your orders or manoeuvring stock around the warehouse. If you've visited our Gold Coast Tasting Room, this won't be the first time you've seen his face since Byron started as one of our casual Tasting Room mixologists! We're so excited to be able to share his story with you and introduce this special limited staff release. To create this release, Byron worked closely with our production team to bring to life a dessert and flavour that sparks one of his fondest childhood memories. Using dried mango, vanilla beans, desiccated coconut and banana chips, the spirit was then vapour infused during distillation with Halo Halo Ube Syrup. The result is a sweet, creamy spirit that tastes like condensed milk, perfect for drinking on ice or adding to your Halo Halo dessert. “For my release, I made a spirit inspired by the Filipino dessert Halo Halo. I chose this because it’s a dessert that represents many fond memories for me, and it’s a delicious dessert that I wanted to share its unique flavours. The main ingredients of Halo Halo include Ube, Leche Flan (crème caramel), Evaporated Milk (or condensed milk), Jackfruit, Mixed Sweetened Fruit and Shaved Ice. Halo Halo translates to “mix-mix”, which is exactly what you do when served with this layered dessert. When I was a kid, one of my favourite memories was visiting my family in the Philippines. One person I loved spending time with in particular was my Lolo (Granddad) Rene. I remember many of the times I spent with him, including afternoons building sandcastles and enjoying Halo Halo by the beach. This sweet but refreshing dessert is a big part of my culture and childhood and something I wanted to share with you in my very own spirit.” Nose: Off the nose the condensed milk and ube is very heavy. Rum Division Single Barrel $295.00
This release is our very first Rum. Housed in our SE Qld barrel room in sub-tropical environments and aged for 2 years and 1 month in a 50L medium char American Oak barrel, this single barrel rum release was made from a pre-maturation blend of distilled molasses (74%) and unrefined cane sugar, known as distilled panela (26%). This blend created the perfect balance of light and grassy notes and bold and bitter notes from the molasses. During the ageing process, 39% of the total starting volume was shared with the angels, resulting in a concentrated mixture of barrel spice and sweet rum. Reduced to 43% ABV, there are only 96 bottles available. Nose: American Whiskey, Toffee Apple, Stewed Fruit, Nutmeg and Clove Palate: Smooth Vanilla, Cinnamon, Golden Crust of an Apple Pie Packaging: Hand packed by us, each bottle is individually wrapped and waxed with the pieces you need to find our hidden treasure. After all, what's a Christmas get-together without some pud and a questionable, but appropriate, amount of custard? This release brings together all of the flavours and aromas of the pudding and tastes just like the holidays. With an abundant but not overpowering botanical list of fruits & ingredients from Nanna's baking cupboard, this liqueur can be enjoyed neat, on the rocks or poured into the custard (or pudding) for something a little boozier this festive season.Nose: Fleshy citrus, candied fruit and baked sweet vanilla. Our Mixologist, Tim Hildebrandt, keeps the team and our customers in high spirits at the Miami Tasting Room. Always happy and bringing good vibes, he's become a favourite amongst our locals and knows how to provide the best experience whenever you visit. Tim worked closely with our production team to bring to life one of his many stories with this particular release. They chose to pre-macerate the neutral spirit with canned peaches (and all their juicy goodness) and then vapour infuse the gin during distillation with earl grey tea, dry peaches, vanilla beans, maple syrup and juniper berries. The result is a sweet and creamy peachy gin perfect for an iced tea on a warm Spring afternoon. “This gin was inspired by my Summers growing up in Canada on our family farm. Like most family businesses, we’d work weeks straight in Canada’s hottest weather, with a day off as rare as rain in the Sahara. The only reprieve was knocking off with an ice-cold glass of Nanna’s homemade peach iced tea, made with the very peaches we’d picked that day. Fast forward 15 years later, and my drink of choice to quench my thirst has remained mostly the same, but having grown up just a little, I prefer my “post-work knock-offs” a little stronger. In 1932 the Bailiff carried an old school bank note bag to collect the final payment for the farm from the young Granddad Jack. He proudly made payment in full, and the Bailiff stamped Granddad Jack's ledger 'paid'. As the next chapter of our Bailiff Whiskey begins, we were determined to create a timeless piece that represents Granddad Jack's values and brings another component to the story. So, this year, we embarked on an ambitious project to create another bespoke item to house our premium, small-batch whiskey releases. In the spirit of Granddad Jack, we've created something to be kept, cherished, and reused long after the bottle is empty. The making of the Bailiff’s Bank Bag: The Bailiff's bank note bag was entirely constructed and finished by the skilled hands of Josef Selway, co-owner and talented craftsman behind the boutique workshop Blue & Grae, located in Albion, Brisbane. This piece was created to represent the old-school bank bag carried by the Bailiff as he approached to collect what was owed on the farm all those years ago. The bag's design and functionality, along with the traditional methods & tools used to craft it, are also a little nod to those from the same era of the story. Every element has been carefully thought about, from sourcing the finest Australian leather & assembling the components with tarnished hardware to represent the age. The dedication to true craftsmanship & meticulous attention to detail shown by Josef guarantees small-batch, quality pieces every time, each slightly different to the next. Since opening in 2018, barrel-aged spirits have been part of an ongoing project at Granddad Jack’s. Our barrels have housed micro-batch gins, whiskeys, and traditional cocktails like the Negroni, Manhattan, and a Martini. We’ve always tried to give new life to a barrel and recycle them for as long as possible to create unique flavours and bring forward the characteristics left behind in the barrel from each fill. This process adds more depth and complexity to a spirit and creates a truly one-off release.In honour of Granddad Jack’s 103rd birthday and the 48 years he spent as the local barber, we rested our award-winning Barbershop Coffee Liqueur for just over a year in a medium-char, American Oak barrel that previously housed our Bailiff Single Malt Whiskey.This barrel-aged coffee liqueur represents what happens when two of our favourite worlds collide, fusing the traditional components of single malt whiskey with the elements of coffee liqueur. Due to the lack of historical methods available, we could not brew the drink customarily. However, we could acknowledge the traditional ingredients & methods of the drink to create & distil Chicha de Maiz (corn Chicha)."When I was 12, my family travelled to Peru to walk the Inca trail & explore the Amazon. Here I learned the importance of traditions, storytelling & culture. It's also where I enjoyed my first alcoholic beverage, Chicha. This traditional Andean South American drink has been historically made by women & used by Aboriginal communities through the centuries for ceremonies, rituals, festivities & everyday drinking. Behind the label: In the spirit of Granddad Jack, we wanted to collaborate with another small business in our community. So this year, for the release of our seasonal Pink on Pink Gin, we worked with local florist Haylee from Huckleberry Flowers to create a unique floral arrangement for our 2022 label. We gave her a pretty open brief and trusted her to make something warm and beautiful, with only one actual request. We wanted to incorporate two things into the bouquet. First is the eucalyptus leaf, which is always in around our distillery and the main ingredient in our signature cocktail, Seymour Street. We also wanted to bring a part of Granddad Jack into the label and include Dahlias, Granddad Jack’s favourite flower and what he grew most often in his beloved garden.

This Granddad Jack’s limited release liqueur is our twist on the traditional Italian Limoncello. It was made with Yuzu, a unique citrus fruit, originally from China but now popular in Japanese cuisine. The Yuzu has a beautiful lemony, mandarin, bergamot flavour and we were lucky to source ours locally, in the heart of the Tweed Valley, from Buck’s Farm (operated for over 40 years by Gerard ‘Buck’ Buchanan, a passionate farmer and an all-round good bloke who was the first commercial grower in Australia). We hand-picked a couple hundred Yuzus and back at the distillery got peeling! The fresh peels sat for several days infusing our Penny Vodka, then the infused spirit was sweetened with a hint of sugar and just the right amount of fresh Yuzu juice to bring out a brilliant tang. The resulting liqueur has the delicious combination of the tangy and sweet Yuzu goodness, making it perfect for a summer cocktail or as a digestif after a night of good food and wine. When enjoying Yuzucello straight, serve chilled (but not over ice) to really enjoy the flavours. Note: The liqueur is super dense in tasty citrus oils from the peel which can sometimes separate into little flavour specs that float in the spirit. This limited release gin is a worthy companion for a Sunday afternoon spent on Burleigh Hill looking over the ocean towards the Gold Coast skyline (if that image seems like a pipedream to you right now, then allow Granddad Jack’s Sunday Gin to sweeten the reality of a backyard picnic during a lockdown). Distilling this gin tested our limits of what can be infused by using blue cheese and quince paste along with juniper, vanilla, cinnamon, fresh quince and apples before leaving it to rest with cranberries for a hint of sweetness and beautiful sunset colour. It has been created as the perfect complement to a cheeseboard shared amongst friends on the famous hill (or in a backyard picnic of course)! Barrel-Aged Peated Two Pencils Gin $145.00
At Granddad Jack’s we love our whiskey and when a barrel of whiskey is emptied (especially a 20L) we often sit and savour the aromas left behind, aromas far too good not to take advantage of and we find ourselves concocting ways to repurpose the barrel and make use of those amazing flavours. This was definitely the case when we emptied a 20L light char barrel that had aged our Peated Bailiff Whiskey. We decided the lightly sweet and smoky flavours left behind in the Ex-Peated Whiskey barrel would be a perfect match to the dryness of our Two Pencils Gin so we re-filled the barrel with it. With regular tasting checks, it was six months later that our Peated Two Pencils Gin was ready! It left the barrel at a respectable 64% ABV and champagne gold in colour before being reduced to a lower ABV (done to bring forward the underlying flavours). This process allowed the smokiness imparted by the barrel along with the classic dryness of the gin to shine through in a unique and balanced way. During World War II, Granddad Jack obtained his trotting licence. He bought a horse called ‘Sack Cloth’, but it never did much good on the track. Earlier legend has it that when Granddad Jack was a lad, he would buy big pencils, then cut them in half and sharpen them to make two pencils, selling both at the races for a penny each…doubling his money. Perhaps this is how he was able to buy his racehorse! Tasting Notes: Two Pencils, an all juniper gin was left to age in a light char 20L American Oak Barrel that had previously aged our Peated Bailiff Whiskey. Nose: Slight smoke, hints of white pepper, maple and pine. Pallet: Pepper and cinnamon hit the taste buds first before fading quickly to reveal a surprisingly light match of juniper, cardamom and crispy maple bacon before a long smoky finish. Fanatical fans of the South American sub-tropical fruit Feijoa (pronounced ‘fee-joe-uh’) will go to great lengths to find & feast on this seasonal fruit, now bottled in Granddad Jack’s limited release Evergreen Feijoa Gin.Feijoa fruit, eaten like a kiwifruit, has a taste that is hard to describe. Some say the centre is a little bit like a mix of strawberry & pineapple & the outer more like a pear, others have said the fruit tastes like a combination of pineapple, guava & sherbet. In this novel & original gin, Head Distiller Luke has created a smooth taste with a soft, almost creamy texture. Rum Division Spiced $150.00
This one-off experimental batch, first blended a Molasses based spirit with a Cane Juice based spirit – in the process, marrying the rich, sweet and woody flavours of the Molasses with the grassy and herbaceous flavours of the Cane Spirit. The blend then spent six months ageing in a small 20L barrel before being infused with spices of cinnamon, vanilla and cardamom. The barrel had previously been used to age our spice led 65 Miles navy-strength gin where the residual flavours remaining in the barrel worked once again to enhance the character of our very unique ‘Spiced’. Easily enjoyed over ice with dry ginger ale and a fresh slice of lime. "The name 2/22 is a tribute to the 2/22nd Australian Infantry Battalion otherwise known as 'Lark Force' who trained in the hills surrounding what later became, Traawool Valley Vineyard, where I grew up. A spirit influenced by her heritage & inspired by Croatian 'Kruškovac' 'Kruškovac' [pron. kroo-shko-vutz] is a fine golden liqueur made from tree-ripened pears which for over a century has been an inseparable part of Croatian customs & celebrations. "My parents migrated from Croatia to their beloved Australia, in 1968 in search of a better life.
