'Spirit of Miami' Surface Festival Gin $95.00
Granddad Jack’s Craft Distillery & Surface Festival have come together to create the very first ‘Spirit of Miami’ release to represent the growing community & culture of the Miami/Burleigh area. The 4220 postcode is quickly becoming the hub for creatives, artists and musicians who continue to deliver quality art & music. We couldn’t think of a better way to showcase this in the spirit than by bringing this to the label. With less than 100 bottles being produced, this incredibly small-batch gin is a very limited release available exclusively through Granddad Jack's Gold Coast Tasting Room. Crafted in Miami by our family distillery, every bottle is still hand labelled and waxed by us, ready for you to enjoy. The public was invited to cast their vote for their favourite artist label submission and whom they thought would represent this special release. On Friday, the 15th of July, the gin & winning artist label was released during a casual event at Granddad Jacks, where artists, creatives, and the public joined us for tastings of the spirit and drinks to celebrate.  Meet the winning artist:  Cara Sanders, also known as Owlet, is a self-taught artist & muralist based in Gold Coast, Australia, where she works as a resident artist at Mint Art House. Owlet’s practise is a love of process inspired by a connection to the natural world & curiosity for life. Abstract & expressionistic, her compositions are energising & sensual landscapes translated by moods & experiences. A fan favourite at the local milk bar and school tuckshop, the musk stick brings back the best childhood memories. They could be licked, softened and shaped into stabbing points for jabbing your friends. Yes, you read that right. Didn’t you have the same childhood memory?To make the Musk Gin Liqueur, we dissolved (and ate) a sh*t tonne of musk sticks in a specifically curated gin to create the perfect balance of boozy and fun. After two weeks, the musk sticks had dissolved into the gin, leaving their classic pink colour, and the spirit was filtered to create a consistent mouthfeel throughout the batch. Bailiff Peated Whiskey $320.00
These whiskeys started out as the same liquid, brewed out of 100% heavily peated malt and distilled in the same batch on the same day. Their journey parted when the, then 65.88% ABV liquid was divided in half & sent to hibernate into two separate small 20L barrels. Each barrel with its own characteristics - as a result of the Cooper’s handcrafting. The barrels were both made of Virgin American Oak and both only lightly charred (one more tightly coopered than the other). The whiskeys spent 2yrs & 1mth sitting right beside each other in our barrel room, ageing away, slowly leaking, evaporating and soaking into the wood until finally being ready for bottling. This is when the differences emerged.

In 1932 the Bailiff carried an old school bank note bag to collect the final payment for the farm from the young Granddad Jack. He proudly made payment in full, and the Bailiff stamped Granddad Jack's ledger 'paid'. As the next chapter of our Bailiff Whiskey begins, we were determined to create a timeless piece that represents Granddad Jack's values and brings another component to the story. So, this year, we embarked on an ambitious project to create another bespoke item to house our premium, small-batch whiskey releases. In the spirit of Granddad Jack, we've created something to be kept, cherished, and reused long after the bottle is empty.  The making of the Bailiff’s Bank Bag: The Bailiff's bank note bag was entirely constructed and finished by the skilled hands of Josef Selway, co-owner and talented craftsman behind the boutique workshop Blue & Grae, located in Albion, Brisbane. This piece was created to represent the old-school bank bag carried by the Bailiff as he approached to collect what was owed on the farm all those years ago. The bag's design and functionality, along with the traditional methods & tools used to craft it, are also a little nod to those from the same era of the story. Every element has been carefully thought about, from sourcing the finest Australian leather & assembling the components with tarnished hardware to represent the age. The dedication to true craftsmanship & meticulous attention to detail shown by Josef guarantees small-batch, quality pieces every time, each slightly different to the next. The story behind the ledger: When Granddad Jack made payment for the farm in full, he had never been prouder. Our barrels have housed micro-batch gins, whiskeys, and traditional cocktails like the Negroni, Manhattan, and Martini.We’ve always tried to give new life to a barrel and recycle them for as long as possible to create unique flavours and bring forward the characteristics left behind in the barrel from each fill. This process adds more depth and complexity to a spirit and creates a truly one-off release.This micro-batch of Barrel-Aged 65 Miles Gin spent ten months resting in a barrel that previously held a classic Negroni cocktail made of Campari, sweet vermouth and our Two Pencils Gin. When the cocktail was emptied and bottled, the barrel kept the bold and bitter notes of orange, cinnamon and a barrel spice of vanilla and clove. These flavour elements made it the perfect match for our navy strength gin, 65 Miles at 57% ABV, and just shy of a year later,  this paid has resulted in another delicious, one-of-a-kind batch of barrel-aged gin.Nose: Bitter orange peel, cinnamon, clove, hot fruit mince with hints of pastry. Palate: Worn and wintery cinnamon burst over the palate, followed by close and orange. Light hints of cardamom, vanilla cigars & black liquorice join these flavours for a long finish. Serving suggestions: With Long-Rays Dark Soda or in our signature Prehistoric cocktail recipe. This process adds more depth and complexity to a spirit and creates a truly one-off release.In honour of Granddad Jack’s 103rd birthday and the 48 years he spent as the local barber, we rested our award-winning Barbershop Coffee Liqueur for just over a year in a medium-char, American Oak barrel that previously housed our Bailiff Single Malt Whiskey.This barrel-aged coffee liqueur represents what happens when two of our favourite worlds collide, fusing the traditional components of single malt whiskey with the elements of coffee liqueur. The characteristics of the whiskey & the properties that oak traditionally contributes to barrel-aged spirits heavily influenced the spirit to create this one-of-a-kind release. Barrel-Aged Peated Two Pencils Gin $145.00
At Granddad Jack’s we love our whiskey and when a barrel of whiskey is emptied (especially a 20L) we often sit and savour the aromas left behind, aromas far too good not to take advantage of and we find ourselves concocting ways to repurpose the barrel and make use of those amazing flavours. This was definitely the case when we emptied a 20L light char barrel that had aged our Peated Bailiff Whiskey. We decided the lightly sweet and smoky flavours left behind in the Ex-Peated Whiskey barrel would be a perfect match to the dryness of our Two Pencils Gin so we re-filled the barrel with it. With regular tasting checks, it was six months later that our Peated Two Pencils Gin was ready! It left the barrel at a respectable 64% ABV and champagne gold in colour before being reduced to a lower ABV (done to bring forward the underlying flavours). This process allowed the smokiness imparted by the barrel along with the classic dryness of the gin to shine through in a unique and balanced way. During World War II, Granddad Jack obtained his trotting licence. He bought a horse called ‘Sack Cloth’, but it never did much good on the track.  Earlier legend has it that when Granddad Jack was a lad, he would buy big pencils, then cut them in half and sharpen them to make two pencils, selling both at the races for a penny each…doubling his money. Perhaps this is how he was able to buy his racehorse! Tasting Notes: Two Pencils, an all juniper gin was left to age in a light char 20L American Oak Barrel that had previously aged our Peated Bailiff Whiskey. Nose: Slight smoke, hints of white pepper, maple and pine. Pallet: Pepper and cinnamon hit the taste buds first before fading quickly to reveal a surprisingly light match of juniper, cardamom and crispy maple bacon before a long smoky finish. Try it at home, neat or with the East Imperial's Kima Kola provided. Dare we say, a deliciously poncey take on a scotch and coke! ABV:  43%
