If Christmas had a scent, it’d smell a lot like this.
Every December, our distillery turns into a dessert workshop. Strawberries, kiwi fruit, vanilla beans, brown sugar, liquorice root, cream and passionfruit bubbling away before being vapour-infused with juniper, meringue kisses and dehydrated strawberries. The result? A gin so nostalgic it’s basically Christmas lunch in liquid form (minus Uncle Garry snoring on the couch).
This isn’t your average festive drop, it’s now a full-blown Granddad Jack’s tradition. One sip and you’ll know why everyone else is quickly adding this one to their Christmas shopping list.
Tasting Notes
Nose: Sweet liquorice and meringue first, followed by vanilla cream, fresh kiwi and ripe strawberries.
Palate: Silky and dessert-like; creamy meringue balanced by dry juniper with pops of passionfruit, kiwi and strawberry.
Finish: Smooth, lingering and dangerously moreish. You’ll want seconds before the dinner hits the table.
The Story Behind the Spirit
Pavlova Gin started as a family experiment in our Gold Coast distillery; a playful nod to the dessert that’s crowned every Aussie Christmas since forever. Seven years on, it’s a ritual: one batch, one time a year, gone before the tinsel's torn down.
Every bottle is crafted, distilled, bottled, labelled and wax-sealed by hand in honour of Granddad Jack, who taught us that anything worth doing is worth doing properly.

MICA’S MIXOLOGY NOTES: A flavourful navy-strength spiced gin that leaves a delightful aftertaste. The scent of cinnamon and star anise is evident upon opening the bottle, and the spices' heat lingers on your palate as you take a sip. The orange peel and cloves then give way to a sweet and citrusy aftertaste, providing an explosion of flavours in your mouth. This navy-strength spirit is incredibly intricate yet harmoniously balanced.

This type of gin can be enjoyed as a good ‘ole whiskey! Suitable for blazers, mulled wines, sangrias, gin old fashioned, gin sours, spiced flavours, or palate friendly with a cinnamon punch. Be careful not to overpower the intense botanicals, rather try to enhance them.
