Limited Release: The genuine article.
Some drinks are made for summer. This isn't one of them. Gin-u-Wine is our winter wine gin. A gin we distilled from scratch, then softened with a wild-fermented Nero d'Avola from Witches Falls. Genuinely warming, a little boozy, and made for the second pour.
It drinks like your favourite mulled winter night: stewed berry pie and sweet baking spice on the nose, a burst of stewed sweet berries and warm winter spice on the palate. Poured over ice with no mixer, it's practically a Negroni.
Less than 300 bottles. One-off. When they're gone, that's it.
A wine gin, genuinely
Gin on the botanicals, red wine at its heart. We distilled a gin with juniper, clove, orange, cinnamon, cardamom and vanilla. Then let it down with wine instead of water. What comes out is deep, spiced and warming: a gin with the soul of a mulled red.
This one started with Jimmy. Years ago, one of our own blended a staff release of wine and gin that was so good we never shut up about it. We could never make it again, because that wine was never made again. The memory wouldn't leave us alone.
We couldn't go another Winter without it. So, Luke set off on a mission to make a wine gin that would do it justice, and justice he did. We distilled a gin just for this release, then reduced it with a wild-fermented Nero d'Avola from our neighbours at Witches Falls, up on Tamborine Mountain. Two Gold Coast makers, one very good idea, finally bottled.
What it tastes like
- Nose
- Stewed berry pie and sweet baking spice.
- Palate
- A burst of stewed sweet berries, then warming winter spice. Deep, bittersweet and spirit-forward.
- Finish
- Long, warm and spiced. The kind of close that asks for one more.
How to drink it
The Perfect Pour : 30ml over one big ice cube, a cinnamon-sugar candied orange slice. Boozy and Negroni-like. Start here.
The Mulled Gin-u-Wine : warmed gently with cloudy apple, orange, cinnamon and star anise. The whole reason we make this in winter.
The Hero Cocktail : our signature winter sour: shaken with lemon, egg white and our blackberry, citrus & clove syrup, poured long over soda in a wine glass, rosemary and blackberries on top.
The Crimson Cup : a jug for the table: gin, lemon, grapefruit, orange and that house syrup, loaded with citrus wheels.
