Limited Release: A wildflower caught and bottled over two weeks, only while in bloom.
Elderflower Liqueur is our 2026 May limited release. Hand-crafted on the Gold Coast across the brief fortnight that wildflower blooms.
Fresh elderflower, de-stemmed by hand because there is no other way. Rested in our Penny Vodka. Finished with fresh lemon and a touch of local honey. Soft, floral, beautifully bright, and built around a season that doesn’t hang around.
Pour it over ice with sparkling apple. Shake it into a margarita. Open it for the long lunch.
One hundred and ninety-one bottles. When they’re gone, so is the flower. We’re not making another batch. The flowers won’t let us.
TASTING NOTES
Nose: Honey blossom and a flicker of fresh passionfruit. Underneath, the elderflower itself: warm, soft, slightly green, the smell of a flower that doesn’t hang around for very long.
Palate: Rounded sweetness arrives first. Honey, then the floral lift of the elderflower. A bright zing of fresh lemon peel and juice cuts through the centre and refuses to let it turn syrupy.
Finish: Citrus closes it cleanly. The floral hangs around longer than you’d expect. The way good company does.

Eldies Gin Margarita: 30ml Elderflower Liqueur, 30ml Two Pencils Gin, 20ml Lime, 5ml Agave. Shake. Don’t skip the shake. We are watching.
The Long Lunch Jug: a table-side jug of Elderflower, Gin, lemon and soda, with wheels of lemon and cucumber. Built for an afternoon you do not want to leave.
