Aged for 2 years and 9 months in a 100L French Oak ex-red table wine barrel, losing over 82% of it’s original volume due to a large leak, and general evaporation and wood soak over the years. The intense flavour profile of the wine barrel—combined with the QLD tropical maturation climate—delivers a rich and characterful spirit, perfectly balanced between barrel influence and our bold base whiskey.  Nose: Sweet fruit cake, dried peaches, hints of oak. Palate: Cigar box, tobacco, dried fruit.

B026 - Ex-Cab Sav Single Malt Wh... $450.00
A whiskey born of a promise, this is our first ever ex-wine barrel whiskey, aged for three years and seven months in a 100L Ex-South Australian Cab Sav French Oak barrel. This complex barrel profile matched with the tropical South East Queensland climate created a perfect marriage of barrel influence and base spirit perfection. At 45% ABV, this whiskey is ideal for a straight tipple, or over a large piece of ice. TASTING NOTES The Nose: This is perhaps the most important part of assessing a whiskey. Perceived aromas result from the production and ageing processes of whiskey. Tasting is simply to confirm what your nose has already told you. Caramel, Vanilla, Tobacco Spice, Sweet Toffee and dark Chocolate. Palate and Finish: Start with a clean palate to truly appreciate the whiskey, focussing on the texture followed by subsequent tastings to analyse flavours & scents. Rolled oats, Dark Chocolate, Vanilla and Oak. B023 - Single Malt Whiskey $450.00
At the time of writing, this is our oldest whiskey we’ve ever released, aged for four years and two months in a 100L Virgin American Oak Barrel. Over the years, this batch lost over 60% of its original volume to the angels, resulting in an whiskey that has concentrated into a dense, flavoursome caramel sip. Transport yourself to the 1920’s, and imagine sitting back in a leather chair, in room with well-dressed bourgeois and surrounded by a thin veil of cigar smoke. TASTING NOTES The Nose: This is perhaps the most important part of assessing a whiskey. Perceived aromas result from the production and ageing processes of whiskey. Tasting is simply to confirm what your nose has already told you. Stewed Figs, Sweet Toffee and Dark Chocolate. Palate and Finish: Start with a clean palate to truly appreciate the whiskey, focussing on the texture followed by subsequent tastings to analyse flavours & scents. Dark Chocolate, Fruit and Nut Mix, Hint of Cigar Box. Bailiff Whiskey Bank Bag & Ledger $425.00
In 1932 the Bailiff carried an old school bank note bag to collect the final payment for the farm from the young Granddad Jack. He proudly made payment in full, and the Bailiff stamped Granddad Jack's ledger 'paid'. As the next chapter of our Bailiff Whiskey begins, we were determined to create a timeless piece that represents Granddad Jack's values and brings another component to the story. So, this year, we embarked on an ambitious project to create another bespoke item to house our premium, small-batch whiskey releases. In the spirit of Granddad Jack, we've created something to be kept, cherished, and reused long after the bottle is empty.  The making of the Bailiff’s Bank Bag: The Bailiff's bank note bag was entirely constructed and finished by the skilled hands of Josef Selway, co-owner and talented craftsman behind the boutique workshop Blue & Grae, located in Albion, Brisbane. This piece was created to represent the old-school bank bag carried by the Bailiff as he approached to collect what was owed on the farm all those years ago. The bag's design and functionality, along with the traditional methods & tools used to craft it, are also a little nod to those from the same era of the story. Every element has been carefully thought about, from sourcing the finest Australian leather & assembling the components with tarnished hardware to represent the age. The dedication to true craftsmanship & meticulous attention to detail shown by Josef guarantees small-batch, quality pieces every time, each slightly different to the next. The story behind the ledger: When Granddad Jack made payment for the farm in full, he had never been prouder. So now, as you join the journey, we mark this moment as you, too, have made payment to the Bailiff. With every drink, we encourage you to celebrate. Bailiff Peated Whiskey $320.00
These whiskeys started out as the same liquid, brewed out of 100% heavily peated malt and distilled in the same batch on the same day. Their journey parted when the, then 65.88% ABV liquid was divided in half & sent to hibernate into two separate small 20L barrels. Each barrel with its own characteristics - as a result of the Cooper’s handcrafting. The barrels were both made of Virgin American Oak and both only lightly charred (one more tightly coopered than the other). The whiskeys spent 2yrs & 1mth sitting right beside each other in our barrel room, ageing away, slowly leaking, evaporating and soaking into the wood until finally being ready for bottling. This is when the differences emerged.
