Every year, our distillery turns into a full-blown dessert workshop. Strawberries, kiwi fruit, vanilla beans, brown sugar, liquorice root, cream, and passionfruit are macerated, mixed, and lovingly vapour-infused with juniper, meringue kisses, and dehydrated strawberries. No shortcuts. No artificial nonsense. Just a heap of hard work and a little Christmas chaos.

The result? A gin that tastes like nostalgia — summer fruit, whipped cream, and family tradition (minus the awkward small talk and Uncle Garry’s snoring). This isn’t a novelty release. It’s a Granddad Jack’s ritual, seven years running, made properly, poured proudly, and gone faster than the last slice of dessert. Because at our place, we don’t do festive half-assery — we bottle the full-ass experience.

Botanicals: Juniper, Strawberries, Kiwi Fruit, Passionfruit, Vanilla Bean, Liquorice Root, Meringue, Cream

Nose: Sweet liquorice and meringue first, followed by vanilla cream, fresh kiwi and ripe strawberries.

Palate: Silky and dessert-like; creamy meringue balanced by dry juniper with pops of passionfruit, kiwi and strawberry.

Finish: Smooth, lingering and dangerously moreish. You’ll want seconds before the dinner hits the table.

The story behind the spirit

Pavlova Gin started as a family experiment in our Gold Coast distillery; a playful nod to the dessert that’s crowned every Aussie Christmas since forever. Seven years on, it’s a ritual: one batch, one time a year, gone before the tinsel's torn down.

Every bottle is crafted, distilled, bottled, labelled and wax-sealed by hand in honour of Granddad Jack, who taught us that anything worth doing is worth doing properly.
