At Granddad Jack's, staff mark their first anniversary by being given the opportunity to work alongside the production team to think up and create their very own spirit. The release is entirely their own, from concept to choosing the botanicals, putting together the label, distilling the product and sharing their story. Our Warehouse Coordinator, Byron Hubbard, is a big part of the behind-the-scenes here at Granddad Jack's, looking after your online orders and keeping everything in the warehouse running smoothly. When he's not carefully curating a playlist to blast out the back, he's labelling and hand waxing bottles, packing your orders or manoeuvring stock around the warehouse. If you've visited our Gold Coast Tasting Room, this won't be the first time you've seen his face since Byron started as one of our casual Tasting Room mixologists! We're so excited to be able to share his story with you and introduce this special limited staff release. To create this release, Byron worked closely with our production team to bring to life a dessert and flavour that sparks one of his fondest childhood memories. Using , dried mango , vanilla beans and desiccated coconut the spirit was then vapour infused during distillation with banana chips, . Halo Halo Ube Syrup The result is a sweet, creamy spirit that tastes like condensed milk, perfect for drinking on ice or adding to your Halo Halo dessert.
“For my release, I made a spirit inspired by the Filipino dessert Halo Halo. I chose this because it’s a dessert that represents many fond memories for me, and it’s a delicious dessert that I wanted to share its unique flavours. The main ingredients of Halo Halo include Ube, Leche Flan (crème caramel), Evaporated Milk (or condensed milk), Jackfruit, Mixed Sweetened Fruit and Shaved Ice. Halo Halo translates to “mix-mix”, which is exactly what you do when served with this layered dessert. When I was a kid, one of my favourite memories was visiting my family in the Philippines. One person I loved spending time with in particular was my Lolo (Granddad) Rene. I remember many of the times I spent with him, including afternoons building sandcastles and enjoying Halo Halo by the beach. This sweet but refreshing dessert is a big part of my culture and childhood and something I wanted to share with you in my very own spirit.”
Nose: Off the nose the condensed milk and ube is very heavy. This is enhanced when chilled. Palate: It starts off with sweeter notes from the condensed milk and sweetened fruit mix, and is quickly followed by the ube flavour and a subtle hint of jackfruit.
