At Granddad Jack's, staff mark their first anniversary by being given the opportunity to work alongside the production team to think up and create their very own spirit.
The release is entirely their own, from concept to choosing the botanicals, putting together the label, distilling the product and sharing their story.
Our Mixologist, Tim Hildebrandt, keeps the team and our customers in high spirits at the Miami Tasting Room. Always happy and bringing good vibes, he's become a favourite amongst our locals and knows how to provide the best experience whenever you visit.
Tim worked closely with our production team to bring to life one of his many stories with this particular release. They chose to pre-macerate the neutral spirit with canned peaches (and all their juicy goodness) and then vapour infuse the gin during distillation with earl grey tea, dry peaches, vanilla beans, maple syrup and juniper berries.
The result is a sweet and creamy peachy gin perfect for an iced tea on a warm Spring afternoon.
“This gin was inspired by my Summers growing up in Canada on our family farm. Like most family businesses, we’d work weeks straight in Canada’s hottest weather, with a day off as rare as rain in the Sahara. The only reprieve was knocking off with an ice-cold glass of Nanna’s homemade peach iced tea, made with the very peaches we’d picked that day. Fast forward 15 years later, and my drink of choice to quench my thirst has remained mostly the same, but having grown up just a little, I prefer my “post-work knock-offs” a little stronger. So for my release, I wanted to capture those flavours from my childhood and create the same refreshing experience in an easy-drinking and laid-back gin. ” - Tim Hildebrandt, Miami Mixologist
