Barrel-Aged Spirits
Since opening in 2018, barrel-aged spirits have been part of an ongoing project at Granddad Jack’s. Our barrels have housed micro-batch gins, whiskeys, and traditional cocktails like the Negroni, Manhattan, and Martini.
We’ve always tried to give new life to a barrel and recycle them for as long as possible to create unique flavours and bring forward the characteristics left behind in the barrel from each fill. This process adds more depth and complexity to a spirit and creates a truly one-off release.
